Cooking with Basil – Recipe for Tomato Basil Soup
When the days get shorter and begin the growing season draws to a close, it's time ideal to make this tomato and basil soup recipe. Enjoy the bounty of your harvest now and impress your friends and family with this soup wonderful. Add delicious cakes and maybe a salad and your loan.
Before you begin, make sure the herbs are clean and dry. One way to do is water them early in the morning and let them air dry until about mid-morning. Harvest herbs before the midday heat allows the plant to retain the essential oils which is what makes them so tasty. Another way to harvest your basil as suggested by Phyliss Shandy in his book, The Treasures of herbs is to choose a warm Breezy day and place two or three bowls of warm water in the area you are going to work. Harvest herbs and Swish them in bowls of water and shake as much water as possible. Then, place the herbs between layers of towels white paper and let them air dry outside for 2 or 3 hours. Be sure to change the towels once or twice. To expedite the process, stem from their leaves and pat the leaves frequently.
Tomato Basil Soup Recipe
Ingredients
2 tablespoons Coffee olive oil
2 cloves garlic, minced
3 cups fat-free, less chicken broth low sodium
1 / 2 teaspoon salt
3 (14.5 oz) cans diced tomatoes, a drained
2 cups fresh basil leaves, minced (I used basil)
Basil or parsley leaves (optional garnish)
Preparation
Heat the oil in a large saucepan over medium heat. Add garlic and cook for 30 seconds, stirring constantly. Stir in broth, salt and tomatoes and bring to boil. Collapse heat and simmer 20 minutes. Stir in basil.
Place half of soup in a blender until smooth. Pour the pureed soup in a bowl and repeat procedure with remaining soup. Garnish with basil leaves or parsley, if desired.

Then, especially for cooks Thai you'll find 'Siam Queen Thai basil. That price leaves purple-winning lovely, fragrant pink flowers that attract beneficial insects and is used in tasty curry dishes. For a few dollars you can buy a package with over 300 seeds. . . plenty to share with a friend.
