The habanero pepper is widely considered the hottest pepper in the world until the bhut Jolokia came a-Knockin '. Bhut Jolokia translates chili "ghost" and is mentioned by many other names in different countries. Some of these names translate to the king of peppers, Poison Chile, and King Cobra Chile.
In 2000, the bhut Jolokia was presented to the Western world. It comes from the state Assam in India and is also naturally in Bangladesh, Sri Lanka and Pakistan. In 2005, researchers at New Mexico State University has grown and tested the bhut Jolokia with the Scoville scale for measuring the level of heat compared to other peppers.
The Scoville scale measured the amount initially the dilution of the sugar-water required to cancel the heat in the pepper as Scoville heat units (SHU). We are now able to separate compounds and measuring the amount of capsaicin in each pepper. There are several different types of heat found naturally in foods. It has a chemical mustard oil, which is the spice found in wasabi and horseradish. The other is capsaicin, which is a compound found in peppers. Although the spice of wasabi often affects the nose and sinuses allows the heat of capsaicin burn the mouth, tongue, throat and stomach.
